    Make quiche, not war.

    Do you ever buy a ton of veggies with the best intentions and a week later find that most of what you bought is still sitting in the bottom drawer starting to get a bit funky? Instead of throwing up the white flag and chucking the phytonutrients in the trash (80 points for compost), why not salvage what you can and make a banging meal that will feed you for days? 

    Quiche is super easy and is totally adaptable. Next time you go grocery shopping, grab a frozen pie crust and throw in your freezer. The next time you visit your fridge and realize some of your spinach is turning yellow, the red pepper is getting a little mushy, or the mushrooms are getting… I don’t really know- they just freak me out after a little while- slimy maybe? Anyway, take it as a call to action, to save your veggies and save your money.

    What to do: Chop up whatever veggies you have, sauteed for a couple of minutes, throw your veggies in the pie crust, add 4-5 scrambled eggs and whatever spices make your taste buds tingle, sprinkle some cheese on top (if you’re into that sort of thing) and bake for 45 minutes at 450 degrees. DONE. You now have dinner, breakfast, lunch, a snack, and/or 4th meal instead of that sense of lingering doom that accompanies throwing away all the money you spent at Whole Foods last week.

    90 Pages in 90 Days

    A couple weeks ago I was talking to a friend and he asked me something I had never really considered before. ”If you were approached by a publisher and were asked to produce a book in 90 days to be published, what would you write about? Length is not important, just a short book, approximately 90 pages.” With that, the “90 Pages in 90 Days” challenge was born.

    There are no rules, no guidelines. You can write about anything- perhaps something different each day, maybe explore your feelings, revisit a topic that you were interested in years ago- the possibilities are endless. If you start today, August 10 would be the 90th day- imagine what you could create. Perhaps you think you’re not a writer or immediately want to respond “I can’t write”. I bet you a bunch of kale you can write a page a day. Of course you can. You can literally blabber about what to wear tomorrow, what you ate for lunch, your favorite things about your bffs, or use your page to vent about the long line at Starbucks that made you late for work. Writing can be incredibly therapeutic- might as well give it a try.

    Shake & Bake Asparagus

    Something just happened in my kitchen. I am by no means the best cook- I like to play and have fun and mix and match with what’s in the fridge and see what happens. Every once in a while, something amazing happens. Maybe it’s the time of year, or maybe my taste buds are playing tricks on me, but I just prepared some amazing asparagus and I feel compelled to share how I did it so you too can have this taste in your mouth. 

    Warning: I didn’t measure anything- eyeball it ;)

    Ok, so- preheat oven to 400 degrees Fahrenheit (London friends, you can do that conversion). While that’s warming up, grab your organic asparagus and cut off the ends if they are white. Take the asparagus and throw it into a large Ziploc (or whatever brand of zippy plastic you like) and add a enough olive oil to cover (without drowning) the asparagus. Add some garlic (chopped, minced, whatever), sea salt, pepper, a slice of lemon (squeeze that juice out) and a sprinkle of shredded Parmigiano Reggiano. Then, start shaking. 

    Once you feel your asparagus is suitably covered in olive oil/lemony goodness, open the bag and place your asparagus on a baking sheet (cover with aluminum foil for easy clean up). Bake at 400 for 8-10 minutes and SHAZAM. 

    Eat it as a side dish, a snack, a meal, whatever. I’m pretty sure that this is some life-changing asparagus. You may want to be cautious when deciding who to share with as I imagine a marriage proposal could very well come after the first bite. Make sure you’re ready for a commitment before serving or things may get awkward fast.

    When life gives you lemons… start squeezing

    I imagine that inside my mind, there is a giant rolodex of information. Today as I was walking around the produce section at Whole Foods, I found myself trying to recall what I know about different kinds of produce and what they do for our bodies. The conclusion I came to was, at some point, my brain must have decided that there was system overload, the rolodex went up in flames and a much more simple list, titled “buy this, it’s good for you… just don’t ask me why” was formed. While this list is super helpful, I’m now on a mission to put the rolodex back together, one factoid at a time. 

    The first food card to throw back on the ferris wheel of knowledge- LEMONS.

    In my quest to remember why lemons are on the “buy this, it’s good for you” list, I racked my brain to try to remember where I first read anything about the healing properties of lemons and traced my mind tracks back to “Crazy Sexy Diet” by Kris Carr. Don’t get scared away by the “D” word. I read this book last year and it’s AMAZING- I would highly recommend it to anyone with a body (aka everyone). Anyway, leave it to google to bring me to her webpage and right back to the fun fact I was looking for:

    “Drink lemon water: 2 cups of lukewarm, filtered water with freshly-   squeezed juice from 1/4 lemon. It helps cleanse the digestive system, ignite your metabolism and buffer excess acids. Despite the lemons being acidic in their natural form, lemon water is alkaline-forming to the body once consumed.”

    Other fun facts about lemons

    • they’re full of vitamin c- boost that immune system!
    • the pectin fiber - curb your cravings!
    • they’re a natural diuretic- release toxins and keep your urinary tract healthy!

    So, the next time a waiter asks you if you would like lemon with your water, I believe the answer is “hell yes”.
